Nicole Taylor (Mitchell) Schafer passed away suddenly on December 15, 2025. Born June 20, 1996, she graduated from Freedom High School and then received her LPN degree from Northampton Community College. She was actively pursuing her Registered Nurse (RN) degree.

Nicole loved the beach, concerts, and adventure. She lived life with joy and enthusiasm. Her happy smile, contagious laugh, and carefree spirit could brighten even the darkest day. She had a gift for making people comfortable, cared for, and loved just being herself. Nicole treasured time with her family and friends. Her absence leaves a space that can never be filled, and our lives are forever changed.

Nicole is survived by her devoted husband, James Schafer; her loving parents, Jody and Brian Mitchell; her brother Tyler Mitchell; her grandmother, Nancy Mitchell, along with many friends who became family and will carry her memory forward.

Family and friends are invited to her visitation on Tuesday, December 23, from 5:00 – 7:00 PM in the Pearson Funeral Home, 1901 Linden Street, Bethlehem, PA.
