Susan "Sue" Shafer Kubik, 73, of Bethlehem, passed away on Saturday, November 5, 2022, at St. Luke's University Hospital - Bethlehem Campus after suffering a brain aneurysm last week. Born in Bethlehem, Pennsylvania, on April 4, 1949, she was the daughter of the late Woodrow Eckhart, Sr., and Helen Halleman Eckhart, and sister to Robert Eckhart and the late Woodrow Eckhart, Jr.

Sue attended Monocacy Elementary and Nitchman Middle Schools, walking from her home on North New Street. She graduated from Liberty High School in 1967 in the largest graduating class and attended Bethlehem Business School. During high school, she worked as a waitress at the Hotel Bethlehem.

She married William F. Shafer, Jr, on June 13, 1970, and had their only child, William F. Shafer, III, a year later. The Shafer families loved camping at Promised Land with family and friends.

She was a loving wife, mother, and friend. She was such a loving mother that her son never wanted to go to school and would rather stay home with his mom.

In the late 1970s, she worked as a noon aide at Spring Garden Elementary School and North East Middle School as a cafeteria worker. After that, she worked as a head teller at First Valley Bank, later Bank of America. She left the bank after an armed robbery.

After divorcing, she married Eugene M. Kubik in 2000. They loved fishing in the Outer Banks of North Carolina and Rehoboth Beach, Delaware, spending time at their camper, boating, and traveling to races.

Later, she worked at Panera Bread and then at Scholl Orchards in Bethlehem.

She loved helping Bill and Michelle with their renovation business as the unofficial job supervisor. She would visit jobs daily, wash windows, help Bill wire a room, or make lunch for the crew. Her greatest passion was Bill and Michelle. She spent time with them by going to yard sales, meeting weekly for breakfast, baking chocolate chip cookies and treats, and taking care of things when they traveled.

Surviving Sue is her husband, Gene; son, William F. Shafer, III, and his wife, Michelle, of Bethlehem; brother Robert Eckhart and his wife, Connie Detweiler; niece, Heidi Eckhart, and her fiance, Gary Moyer; three great-nephews, Cash, Lincoln, and Cole; and her previous husband, William F. Shafer, Jr. and his girlfriend, Judy Mauer.

The family would like to thank Sue's friend, Margo Urban, for being such a great friend and her help last Friday.

Her family and friends will miss her terribly.

Services will be on Friday, November 11, at 11 a.m. at the Pearson Funeral Home, 1901 Linden Street, Bethlehem, PA 18017. Friends and family may call on Friday morning from 10 to 11 a.m. Interment will follow in Cedar Hill Memorial Park, Allentown, Pennsylvania.
